9. 推薦幾種家常小菜的做法吧，以便應付朋友的突然來訪！
1，開胃菜：涼拌黃瓜
新鮮黃瓜去籽，削皮，放鹽少許淹20分鍾，然後加糖，蒜蓉，姜絲，麻油，味精涼拌。（已經准備好)
2, 開胃湯：西紅柿蛋花湯
用旺油爆炒蒜蓉，然後放入西紅柿，翻炒片刻，加入沸水，等西紅柿汁燒出後，加入蛋花，2分鍾後起鍋。
特色：西紅柿蛋花湯有一股濃濃的蒜香味，以及西紅柿和蛋花的清醒味道。
3，主菜：三椒雞翅
將雞翅用鹽腌1小時後，加水去血水，將雞翅燒到5分熟，待用
用旺油翻炒蒜蓉，姜絲，（由於不吃辣，堅決不放辣椒）爆香，然後放入待用雞翅，稍許生抽，糖，調味，加入微量老抽上色，待雞翅完全熟透，上色完畢以後，加入三種顏色的青椒絲，炒熟以後，加入蔥點綴。
特色：紅色，黃色，青色的青椒絲搭配甜酸適宜的雞翅，就是色香味俱全
4，回鍋肉
在旺油裡面放糖翻炒五花肉，直到顏色變成金黃色，同時肉已經完全粘上了糖，加蔥，蒜，姜絲，老抽，鹽，生抽，一直到炒干汁水，讓肉完全入味，著色。
然後加入水，放入胡蘿卜，大火燒10分鍾，最後改用小火，翻炒，到最後汁水燒干
5，糖醋排骨
生抽，料酒，糖，薑末腌制排骨，留住汁水
燒油8分熱，翻炸排骨，至兩面焦黃
新起鍋，倒入炸好的排骨，澆剛腌制的汁水，放蔥姜蒜，醋，小燉至汁水吸盡！
6，紅燒魚
這里選用的是英國的彩虹魚
將魚用油炸到2面全熟，成金黃色。然後用一個小碗調汁：放入醬油，醋，糖，番茄醬，調勻，加入水和啤酒少量。
用蔥姜蒜爆香，放入調汁，燒到沸騰為止，然後淋在炸好的魚身上既可。
7.麻婆豆腐的做法：（1.准備材料：豆腐切塊、牛肉切末、豆瓣醬（最好是四川郫縣的）、鹽、酒、干紅辣椒碎、青蒜、薑末、花椒粉、水澱粉、醬油、少許糖
（2.鍋內加少許菜油，大火加熱，油熱後依次加入豆瓣醬、鹽、干紅辣椒、青蒜、薑末、花椒粉、牛肉末、也可將牛肉末用上述調料腌好後一並加入。 炒香。
（3.加入切成小塊的豆腐。改小火，煮沸。
（4.待豆腐熟後，改大火，加入由水澱粉、糖、酒、味精、醬油調好的芡汁。待芡汁均勻附著後，關火，起鍋。撒上花椒面，香噴噴，川味十足的麻婆豆腐上桌啦！
8，蔬菜：調節油膩感，追求清爽
西芹蘑菇
西芹切絲，蘑菇切片，放鹽，糖等爆炒
9，酸溜土豆絲
土豆絲切絲，用沸水先將土豆絲去味，燒至5分熟，下鍋，放入醋，鹽等爆炒
（土豆絲加水先燒，也不容易粘鍋）
